Savoiardi biscuits
custard
2 eggs,separated
½ l. milk
50 gr. plain flour
lemon zest grated
50 gr.granulated sugar.
50 gr bitter cocoa
30 gr.plain flour
½ liter milk
80 gr. granulated sugar
knob of butter
a glass sweet marsala
Make custard by whisking the egg
yolk ,sugar, flour and milk.
Bring to simmering point over a low
flame ,stirring continuously.
Drow off the heath and dust with
powdered sugar so that a skin does not form on th surface.
Make chocolate sauce by putting
cocoa,sugar, flour , milk into another saucepan .
Work everything in together well
before placing over th heat.
Cook very gently for about a
quarter-hour
add th butter and leave to cool.
Brush with marsala
Pour a little custard into the
bottom cover with savoiardi steeped in marsala
then some chocolate sauce and so on
untill the dish is filled up.
Place in the refrigerator and serve
after 2 hours.
